Randy Moss...wow...this guy is a laugh a minute, eh? After his new team, the Minnesota Vikings, lost to his old team, the New England Patriots, Moss decided to let the love flow—literally.
He seemed, at times, troubled, and at others incoherent as he rambled and tripped his way through a soliloquy at the post-game press conference.
The entire transcript of everything he said is offered here, but here are just a few excerpts:
"... I'm not going to answer any more questions for the rest of this year. If it's going to be an interview, I'm going to conduct it. So, I'll answer my own questions, ask myself the questions and then give you all the answers. So, from here on out, I'm not answering any more questions for the rest of this season..."
Moss was fined $25,000 earlier in the week for "failing to cooperate with the news media". He, apparently, took offense to that and hence the above decision to not speak to the media anymore this season. Well, that's all fine and good, Randy, but you look like a bit of a head case saying you'll conduct your own interviews and ask yourself the questions—seriously, dude, get a grip.
"Man, I miss them guys, man. I miss the team. It was hard for me to come here and play. Been an up-and-down rollercoaster emotionally all week. And then to be able to come in here and see those guys running plays that I know what they're doing, and the success they had on the field, the running game -- so, I kind of know what kind of feeling they have in their locker room, man, and I just want to be able to tell the guys that I miss the hell out of them. Every last helmet in that locker room, man."
Wasn't this the same guy who felt unappreciated in New England a few weeks ago? Jeez, you'd think he'd forgotten why he's back in Minnesota in the first place—you talk too much, Randy.
"I tried to prepare. Tried to talk to the players and coaches about how this game was going to be played and a couple tendencies here, couple tendencies here...It hurts as a player that you put a lot of hard work in all week, and toward the end of the week, Sunday, when you get on the field, that's when they acknowledge about the hard work you put in throughout the week. That's actually a disappointment."
Hmmm, now where have we heard this "I feel unappreciated" song before...*thinking*...oh yeah:
Randy, Randy, Randy...when will you ever learn?
Here was the best part of the tirade:
"I don't know how many more times I'm going to be up here in New England, but I'm going to leave the New England Patriots, Coach Belichick, man, with a salute, man. I love you guys, I miss you, I'm out."
Good grief, you'd think the Patriots birthed Moss' children. Wonder how the Minnesota fans will react to his Patriot love fest?

Our pumpkins...
I was inspired this year by the Design*Sponge DIY project, but I'm notoriously impatient and just free-handed my pumpkin with a spoon and steak knife. Maybe next year, I will take more time on it. :) Matt's is the bigger of the two. I like how you can see Indy in the background.

SMS - Goat Cheese, Olive and Thyme Muffins, combines with the Gutsy Cooks Oxtail Stew and Polenta - Plus Some
It is Hanaa's week to host for Sweet Melissa Sundays! Hooray for Hanaa of Hanaa's Kitchen! Such a wonderful baking friend and always helpful with cooking/baking tips and knowledge. Hanaa chose Goat Cheese, Olive and Thyme Muffins. Since I have missed the last two weeks with the Gutsy Cooks, who also post on Sundays, I caught up by making a full dinner by combining the menus from both groups. Hopefully I am not confusing anyone here =).
I stuffed my muffin cups with batter since I decided on baking a full batch. Melissa says the recipe only makes 12 muffins but the last 3 times I have baked this recipe, using the different add-in ingredients, the recipe has made more like 18 muffins.
Melissa's baking time is a little too long, according to my oven. The muffins were done in 18 minutes.
The filling with goat cheese, olives, and rosemary is delicious! I wish I had added more rosemary because the fresh herb seemed to get lost in my muffin.
Then there is the vanilla custard. I baked the custards in a water bath the same as the coconut custards we tried earlier ONLY this time I baked the custards a LOT longer. The custards baked along with the oxtail stew but only for 40 minutes at 300 degrees F.

Thank you Hanaa for the easy and delicious choice. Look at other SMS's bakers twists on the recipe by clicking here or go to Hanaa's blog here for the recipe. Now, ON TO GUTSY COOKS!
I may not have been posting the blog BUT I have been cooking right along with the Gutsy Cooks. My excuse, after looking for work in the Northwest for the last 10 months, I have officially started a new job and what a relief~! I am exhausted getting by at 4:15 a.m. and not getting home till after 7 p.m. but I will take the schedule any day over the stress of job hunting.
Now on toooo this week's menu chosen by Monica as the last week of October: Oxtail Stew with Wine and Herbs over Polenta. The recipes are found in The Illustrated Kitchen Bible by Victoria Blashford-Snell and to get the recipes, you will need to buy her cookbook. The author has not given permission for the host to post the recipe. Dessert is last week's Vanilla Custards.
My first time EVER trying oxtail anything. I went to my local butcher, the only place out of 4 major grocery stores to carry oxtail, and the butcher only had 1 package weighing 2 pounds. They sell out on a regular basis - who knew? I ordered another 5 pounds to be picked up next Friday, encase we loved the stew. My husband and I enjoy trying new dishes and this is definitely new for the both of us. I already had beef soup bones with lots of beef still attached so I made up the difference of 4 1/2 pounds with beef.
The recipe calls for fresh thyme and rosemary, a drizzle of honey, salt and pepper for seasonings.
Chopped onions, carrots, fennel, garlic cloves (I added 4 minced) and 2 hot red chiles are all sauteed until tender (about 5 to 6 minutes) then add with the browned oxtail tail and beef bones. A bottle of hearty red wine Cabernet Sauvignon was added as the liquid base for the stew to slowly braise in.
2 1/2 hours later, the oxtail stew came out of the oven and smelled amazing with all the slow roasted vegetables and meat. The sauce had a deep brown color and the flavor picked up all the fresh herbs, vegetables, and meat to make an amazing gravy, poured over the polenta with freshly grated Parmesan cheese.
I was raised around brown and white rice, potatoes, and pasta for versions of side dishes. Polenta is a newer dish for me, in fact, this recipe will be the third time I have made polenta. We like it but the texture is still an adjustment.
The verdict is we LOVED the oxtail stew. Oxtail meat does not taste like beef and pulling the meat off of the bone takes a little doing. Definitely tender but a different texture and the meat can kind of a sweeter, different taste that I liked but just can not put my finger on to compare with anything else I have eaten. I am curious to see what others already know about the meat so I can get a better idea of what is normal to expect.
What is not admire and enjoy as a true comfort food the a custard whose base starts with a fresh vanilla bean, simmering in heavy cream and whole milk? Whipped egg yolks and honey are whipped into a thick frenzy and the simmered and soaked vanilla bean mixture is slowly added. Pour into 6 oz. ramekins, set in a water bath containing boiling water and slowly bake until set. Did I mention what is not to like? What a relief to have several dishes turn out right.
I feel terrible saying such a think BUT the empanadas and coconut custards did not turn out and I was having a little trouble pushing myself to keep trying the next recipes. Now, I am glad we did! Thank you Monica, the creator of the Gutsy Cooks group, for choosing all the recipes for the month of October. Last night's dinner kicked butt and was delicious!
Here is the photos of the Empanadas and White Bean Soup for the week of October 17. I really added twists to the bean soup. First I did not blend the beans up in the puree. Also, I simmered the beans with a smoked ham hock. I later took the bone out, pulled the ham and added the pulled meat back into the simmered beans with celery and carrots. I omitted the Pancetta, even though I bought it because, well simply stated, I forgot.
I am not sure if this soup counts since I deviated a LOT from the recipe but we loved it.
The empanadas are a different story. I made a big mess trying and we really did want to like these. The dough is what caught us up and I already changed up the filling ingredients. I just could not do Tuna. The thought made my tummy flip-flop.
Maybe I rolled the dough to thick but the flavor was bland and dry.
I used diced pork with the chopped tomatoes and 2 tsp.'s of tomato paste along with a jar of chipotle corn salsa.
The filling was okay but the whole empanada was hard to eat more then one. I pulled out more salsa for dipping, still we did not eat even half of them. I felt bad posting a negative response but I think being part of a group is knowing that we all have different tastes and this just didn't hit ours.
I do want to try empanadas again, with a different dough recipe, since this was also a first for me to make and the idea was a wonderful one. Thank you Monica for widening our horizons in the kitchen!
Our final stop on the Haunted America Tour:
Haunted America Day 5
It is difficult to define a haunted place as each has unique paranormal activity. Researchers can put in a ton of hours just to study one particular place before assigning it “Haunted”. This final stop on our tour is one place considered to be the scariest!

Haunted America #6: The Haunting of the West Virginia Penitentiary
Information found at http://www.hauntedplacesinamerica.com/the-haunting-of-the-west-virginia-state-penitentiary
It was decided that the prison would be extended in 1929, the construction did was not completed until 1959. In these 20 years the prison was grossly overcrowded with some cells having 3 inmates each.
West Virginia State Penitentiary is the home of many executions over the years it was open either by hanging or electric chair, but executions were not the only deaths in the prison; Illness, Overcrowding and Riots killed many inmates.
How haunted is this place?
The Maintenance Man
This is the most popular of the 3 to come up. A maintenance man working at the prison when it was open used to spy on the inmates and reporting the inmates’ bad behavior. One day he was in the bathroom, he was attacked by several inmates and killed. He is said to be lurking in the bathroom where he was savagely murdered, but he makes no contact with the living.
Robert the inmate
Robert is said to be an inmate who was violently murdered by the prison guards who were known to be physically abusive towards the worse inmates. They would beat them to ‘near’ death, but this time ‘near’ was too far and they killed Robert. His remains are said to be buried behind one of the walls in the prison. Roberts’s spirit walks the prison to this day terrifying anyone he comes into contact.
Avril Adkins
Last but certainly not least is the story behind Avril Adkins, he was sentenced to hang by the neck until death. He was taken to the Gallows for hanging but something went wrong during the hanging and Avril fell through trap door and landed on his head, he had a very serious head injury. The guards picked him up, took him back up the stairs and hung him, this time he died. Many visitors to the prison have said they have seen him walking around the Gallows where he died.
West Virginia State Penitentiary is now closed to all inmates, but it is open to tourists and visitors.

Haunted America Day 5: The Stanley Hotel
Picture is courtesy of about.com
The Stanley Hotel has many stories but no of which have been violent, so it appears that the ghostly residents are just that, residents. Hotel workers and guests have commented on hearing the piano in the Ballroom being played, when it is investigated no one was found at the piano or even in the Ballroom. The employees of The Stanley Hotel believe that it is the wife of Mr Stanley that is the ghostly piano player.
Room 418 is said to have the most paranormal activity and the full 4th floor has the majority of the paranormal activity, the sound of children playing in the halls has been heard on a few occasions even though there have been no children around. There are reports of people seeing a man standing in their rooms and then running into the rooms closet, others have said they have seen someone standing in the middle of there room and then just disappearing.
The most prolific story to date is the one from GhostHunters TV show, while the camera crew was changing the tapes in their cameras a table had jumped two feet into the air! Now this would have been great evidence if caught on camera. Also, Ghost Hunter Jason stayed in the room of which a spirit stealing from guests is said to stay during the night he claims that the bed moved, closet doors locked and unlocked and his glass at the side of his bed cracked open from the inside.
A person was on a ghost tour of the hotel and happened to take this picture just out side the hotel. As you can see the window has a child at it, but the figure is very hazy when it shouldn’t be because that window is actually opened. The person that took the photo investigated into this photo and called the hotel. This is the response he got:
OK, the room number is 1211. Last Friday, there was a single man checked in that room who was part of a business conference. That doesn’t mean he DIDN’T have a child with him, but it is unlikely that he did. — Stanley Hotel

Haunted America #5: The Stanley Hotel
Information found http://www.hauntedplacesinamerica.com/the-stanley-hotel
The Stanley Hotel is in Estes Park, Colorado it is a 138 room hotel which has amazing view of the Rocky Mountain National Park. The Hotel was opened in 1909 by American businessman, Freelan Oscar Stanley. Stanley suffered from Tuberculosis in 1903 and was asked to move west in order to help his recovery, while staying in a log cabin in Estes Park he instantly loved the area and he decided to build The Stanley Hotel there.

The paranormal activity present in The Stanley Hotel is a lot, I do have no reason to think that there are any violent or bad spirits present. So if you are ever near The Stanley Hotel and are need of a hotel for the night, you know where to go.
An Immortal Treat with Poisedon and Mila & A Contest
An Immortal Treat and Contest with Poseidon and Mila by Susan Hanniford Crowley

Cherries (pitted)
Quart of Vanilla Ice Cream
Bag of Oreo Cookies
Chocolate syrup
Quart of Cherry Ice Cream
Directions:
1 Crush the Oreo Cookies in a bowl
2. In a small bowl put a scoop of Cherry Ice Cream

4. Spoon in two tablespoons of crushed Oreo Cookies
5. Crisscross with chocolate syrup

7. Cut each cherry in a crisscross (cut cross ways but not all the way through) and spread the four petals like a flower
8. Place two or three of your cherry flowers on the top
In these modern times, even the Greek Gods need to adjust. When Poseidon wanted to find love, he wanted to make the best impression possible on a modern woman.
BLURB of Poseidon’s Catch:
BLURB of Poseidon’s Catch:
Sexy Poseidon aches for eternal love.
Mila would be content to taste love
once however fleeting.
When Poseidon meets Mila, a passion
ignites in him that he's never known
but she is burdened by a secret.
Can Poseidon save the woman he
loves before the sands of time run out?
EXCERPT:
“I want to hear what Aphrodite suggests.”
“I want to hear what Aphrodite suggests.”
Her smile broadened. “For starters, the beard has to go. It makes you look old.” She tousled his hair. “That wavy black mane of yours could use a trim. Oh, those gorgeous cerulean eyes are perfect. Maybe some sunglasses to play a sexy game of peek and boo.”
The two gods followed the goddess of love, as they went down two corridors and into her throne room. A mirror on a marble table stood off to one side. The three gazed into it at once.
“Now to find the perfect place where Poseidon can fall in love.” Paris lit up then faded. Numerous romantic locations displayed their glory in Aphrodite’s mirror. Finally it was down to two: The French Rivera and Cancun.”
A frenzy of almost nude dancing bodies filled their view. “Cancun is having a bacchanal?” Poseidon stared wide-eyed at the wet barely clad beauties.
Apollo drooled. “This one. Posei, pick this one. I’ll go with you.”
The view kept changing. In a sea of faces, Poseidon saw one small delicate face. Then she was gone, lost in an ocean of sprawling, celebrating, feasting humanity.
Aphrodite giggled. “Cancun it is then.”

Haunted America #4: The Ghosts of Bowling Green State University
Information found at http://www.hauntedplacesinamerica.com/the-ghosts-of-bowling-green-state-university
This might be superstition but going by what transpired when a Henry IV production was supposed to take place, this superstition seems to be well placed. Apparently there was some loose talk about Alice during the rehearsals and very surprisingly on the opening day of the show, the University computers just went offline without any reason and certain props that were part of the show also suddenly gave way injuring some actors severely. People then believed that this happened due to the loose talk and Alice was the person who caused this to happen.
The Sorority House within the campus also has had a ghost in the form of Amanda visiting it quite frequently. She is reported to have been killed in a train accident and this happened the same night she was supposed to have been inducted into the Sorority. A particular room in the Sorority constantly witnesses strange poltergeist similar happenings with picture frames falling off suddenly and even lights getting turned on and off on their own, besides noises coming out of nowhere and without any warning.
The girls at the Sorority still leave a vacant seat for Amanda respecting her wish to become part of the Sorority when they take out group photographs
